We all have those meals or desserts that give you a warm feeling inside. Just the thought of the food makes you hungry, and it makes you beam. This pie recipe is great for all kinds of celebrations: Thanksgiving, birthdays, Christmas, graduation parties or even just one of those foods that you make just for fun. My grandma has baked this pie for my grandad on his birthday for over 45 years. It still makes him smile. Feel free to use this recipe and make someone happy (heck, make the entire pie for yourself).

Blueberry Cream Cheese Pie

Ingredients

8 oz. cream cheese (soft)

¼ cup granulated sugar 

¼ cup dairy sour cream

½ teaspoon vanilla

1 nine inch baked pie shell (cooled) OR 1 graham cracker crust

2 or 3 cups of fresh blueberries OR thawed frozen blueberries

½ cup water

½ cup granulated sugar

2  tablespoons cornstarch

1 tablespoon lemon juice

2-3 tablespoons sifted confectioners 10x sugar

Dash of ground cinnamon

Dash of nutmeg

Instructions

Blend together cream cheese, ¼ cup granulated sugar, sour cream and vanilla until smooth.

Spread mixture evenly in cooled pastry shell; chill until firm.

In a small saucepan smash 1 cup blueberries, add water and bring to a boil. Strain; add water to blueberry juice to make 1 cup.

Combine the remaining ½ cup sugar and cornstarch; stir into blueberry liquid.

Return to saucepan and cook, stirring constantly until the mixture thickens and bubbles. Remove from heat.

Stir in lemon juice and cool.

Place remaining blueberries over cream cheese layer, and spoon glaze evenly over all. Chill well about three hours.

To serve, combine confectioners sugar, cinnamon and nutmeg and sift over pie.
